Spiced Potato Tacos

Knowledge Drop | Containing higher-quality protein than eggs, potatoes often grouped with the unhealthy foods, when they’re actually great for you when made right!

Sometimes we forget that potatoes are a straight-up vegetable packed w/ nutrients since they’re usually fried, processed, or loaded with fattening toppings. Just one large, raw potato contains up to nine grams of fiber, three times the amount of potassium than what a banana would give you, and rich with Vitamin C. Plus all the other fun stuff like: Magnesium + Vitamin B6 + Phosphorus and Folate!

Everyone likes to get caught up in the “carby” part of potatoes, but as long as they are paired w/ other healthy servings of proteins and vegetables in your daily intake, you might be asking for more of those potatoes ;)

Heating Instructions

Heat black beans in lightly oiled pan and plate. Saute potatoes over med heat. Build tacos in corn tortillas (Heating optional).


TORTILLAS: masa harina, beet. CREAMY JALAPENO: jalapeno, garlic, cilantro, avocado oil, cumin, pink himalayan salt. SPICED POTATOES: potato, onion, garlic, cumin, chipotle, paprika, nutritional yeast. PICO: tomato, onion, jalapeno, cilantro, lime. BLACK BEANS: black beans, jalapeno, onion, spices, pink himalayan salt. TOPPINGS: lettuce, cilantro, lime.
