Big Gigantic Bowl

Knowledge Drop | Packed with anti-inflammatory beets + sweet potatoes, this Big Gigantic bowl proves that it’s the little things in life that make all the difference.

Named after one of our favorite local Denver bands (who happen to be big YA•YE fans), This Big Gigantic Buddha Bowl is a great way to get a BIG variety of nutrients in a fun and flavorful manor.

Let's break it down (cue the Big G song above): the sweet potatoes in this dish offer a plethora of vitamin A + C, manganese, potassium, and fiber. Beets offer a high concentration of nitrates, which help lower blood pressure and are known to enhance athletic (and stage) performance. Quinoa is packed with essential amino acids as well as plant-protein, helping you feel satisfied for longer.

Complete with a generous amount of spinach, this Big Gigantic Bowl also provides you with vitamin K, folate, iron and illness-fighting chlorophyl (the natural pigment responsible for giving spinach its rich green color). It really is The Little Things.

Heating Instructions

Add 1 TBSP of oil to pan and sauté sweets, beets, gigante beans + green rice over medium heat until warm. Serve ontop of spinach and top with cabbage, carrot, radish, pickled onion  + sweet tahini dressing.
